Fried
snapper with pickled single clove garlic dressing |

Ingredients
- 350 g. snapper fillet
- 100 g. crispy flour
- 1 egg
- 50 g. bread crumb
- 1/4 cup “Maejin” pickled single
clove garlic
- 1/4 cup chopped lemongrass
- 3 tablespoons chopped shallot
- 2 chopped leech lime (Ma-krut) leaves
- 2 tablespoons chopped red chilli
- 10 peppermint leaves
- 1 coriander root
- 4 garlic cloves
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 1 tablespoon chopped bird chilli
- 1 tablespoons “Maejin” pickled
single clove garlic medium
- vegetable oil |
Instructions
1. Dust the snapper fillet with the crispy flour, put
it in the beaten egg, and then roll the fillet in bread
crumb.
2. Fry the snapper fillet until they are browned and
cooked through. Transfer to a serving plate.
3. Pound the coriander root and garlic cloves together.
4. Mix the dressing with fish sauce, lime juice, sugar,
and “Maejin” pickled single clove
garlic medium. Add chopped bird chilli and the
mixture from process 2 Stir well and then add “Maejin”
pickled single clove garlic, chopped lemongrass,
chopped shallot, chopped leech lime (Ma-krut) leaves,
and chopped red chilli.
5. Pour the dressing onto the fried sanpper. Top with
the peppermint leaves before serve.
