Snapper
herbal soup with pickled single clove garlic |

Ingredients
- 300 g. red or white snapper, cut into 1 inch thick
- 4 cups water or stock
- 5 lightly pounded shallot
- 5 slices galangal
- 8 lightly pounded “Maejin” pickled
single clove garlic
- 1 teaspoon sour tamarind juice
- 1 teaspoon fish sauce
- 1/4 cup basil
- 1 parsley, cut into short pieces
- 5 deep fried bird chilli
- 1 teaspoon lime juice
- sweet basil and "Maejin" pickled single clove garlic for decoration |
Instructions
1. Medium heat water or stock until boil.
2. Add shallot, galangal, and lightly pounded "Maejin" pickled single clove garlic. Heat the soup until boil again.
3. Add the snapper and boil until it done. Do not stir
the soup.
4. Season the soup with sour tamarind juice and fish sauce.
Add basil, parsley, deep fried bird chilli, and lime juice
and then put out the heat.
5. Put the soup into the serving bowl. Decorate with sweet basil and "Maejin" pickled single clove garlic. |
